If I were to eventually source an original bezel, slide rule and hands to piece this watch together, what would you estimate its value? Let's say the condition would be 7/10ish

Tend to agree with David as to value at 7/10 rating. Just another reason why you have to be smart when getting into projects, you can easily spend far over the value of the restored project. No different than classic car collecting and I’ve done both!
On value again.... first question for me is why are you collecting? If it’s profit motivated than you might want to consider a new interest. We all like profit don’t get me wrong but for ME profit isn’t my #1 motivation. Love of the brand and trying my best every day to learn more and find lost treasures is my passion for Breitling. I personally can’t afford to buy every vintage Breitling I come across but the ones I can I cherish and love! Wear them all the time as was intended and if I feel motivated, I move one out to a new home and find another, always looking for more! But... I have keepers!!! If I break even in the process I am happy. Just something I love to do and just am passionate for vintage Breitling....
When I got into watch collecting, profit was never on my mind. Probably another reason I am poor. It’s that living, beating object on my wrist that drives to passion!

Just curious. Like I said before, I have no intent to sell the watch. I love the history and style of these vintage watches. Just like you I intent on wearing it once its in wearable condition.

Speaking of which, are there any compatible parts that would make this watch whole and wearable? Not necessarily matching or original, but maybe temporary pieces?

Sadly probably not. You’ll need to find a bezel. I guess you could have a non-rotating bezel gabbed if you want but doubt a good use of time/money.

After closer inspection I was wondering about something I noticed on my dial (see first post). At the 6 position there are no markings for "swiss made" but instead it is marked "fab sussie" on the next outer-most white ring. After a bunch of research (googling), i have yet to find another dial like this. Does anyone know if this is an early variant or an indication that it was faked or refinished?

Your dial is genuine and original. But I think it is earlier than the case. I think the dial comes from a 769 with a serial# below 490,000. There are a number of examples of 769's with fab. suisse and without the red arrow, all with serial#'s below 490,000. So the good news is you have a very early dial. The bad news is the watch is more franken than you thought.

This seems consistent with the early dial.
