Hi chaps
I've just bought an Aerospace E79362 which comes with all the correct papers, box (compared it to another ling I own) and history which all looks original. How can I double check just to satisfy myself now I have it in my hands that it is 100%? I don't really have any doubts as it looks legit but you never know...

Also, I need to have the strap adjusted by adding a link. Best places to trust to this? Is a local jeweller safe to do this/easy enough?

There really are no credible fakes of the Aerospace. If it looks like a pukka Aero, it will be, esp as you have the right papers. But as zak says, post a pic if you want total peace of mind.
