Just wanted to double check if its normal that my new IWC Pilot is changing the weekday around 12:30 am instead of 12:00 am. Thanks for any help!

Perfectly normal. The functions are separated because of the amount of torque required to make the change - the watch wouldn't have enough power from the mainspring to change everything at the same time.
