Whats the absolute correct procedure for winding / setting date if an automatic watch has stopped between the hours of 8pm and 3 am ?

You can adjust the time with aboslutely no problems, you just can't use the quickset date function.

The best way to set the time on a watch that has stopped to ensure that you don't damage it and to ensure that the date changes at midnight rather than noon is:

1) Change the time until it is not between 8pm and 3am
2) Change the date until is the day before the current date
3) Change the time through midnight (to move the date) and set the correct time

Obviously if it's stopped it will also need winding.
