Use paypal gift if you are not sure of the buyer. Paypal always sides with the buyer, I have had refunds given by ebay/paypal without them even bothering to know if the item was returned or not, they just want to protect buyers and keep them happy.

Gift can be disputed as well.

If a buyer wants to use PayPal for protection, he is not going to agree to PayPal Gift.

PayPal Gift does not protect the buyer at all as it's assumed that it's a "friendly" transaction.

I always wait 3-4 days... always look out for YOUR best interest. A buyer (in my opinion) can wait the 3-4 days for the funds to clear into the sellers account. Tough $hit. ;)

to be on the safe side, I would request payment by bank transfer only.
