Personally I tend to like black dials on "proper" dive watches as it makes the contrast between hour markers/hands and the dial itself much easier to read off at a glance. I also think that the darker colours are more in keeping with the diver's watch look.
However, the Colt GMT isn't a divers watch, so I think both the light and dark dial colours work equally well. My Steelfish has a black dial, whereas my SA has a white dial and it looks great, so really it's all down to personal preference.
