My fear although not tested yet is that if I wear the Transocean over 15 days the gains over day 15's 24 hour period will be over 15-20 seconds which would be well out of COSC.

My understanding is that COSC specs is -4/+6 seconds per day or minus one minute or plus 1.5 minutes over a 15 day period. Thus, if you didn't wear one of your watches for an entire month it could be anywhere from 2 minutes slow to 3 minutes fast and still be within specs.

He thinks the variation per day is going to increase by around a second a day - i.e. wear it for 10 days it will be 10 seconds per day fast, wear it for 30 days it will be 30 seconds per day fast.

Roughly but yes, the trend is going in that direction. The "seconds per 24 hour period" increases every single day.
