I've noticed that most 810s have a short "hat" on their "G" in Geneve. One I'm considering purchasing has a longer hat. I would assume it a reprint, but I did spot one other 810 that looks the same.

Can someone give me any info or insights into the dial I'm looking at?

Yes I think it's a redial, albeit a good one. I would also note the "T Swiss Made T" on your dial. Top Times say "Swiss Made T". The radial metallic pattern and colour of the dial is also more reminiscent of the 815 Long Playing dial. Note the other picture you provided has no Top Time on the dial at all, so clearly not a Top Time!

dial texture & printing is very similar to the LongPlaying 815 - might be a service dial from the 1970s ?

I have seen this watch a Kronometer Stockholm LP 815, made for the Swedish phone company. No Top Time on the dial and also signed T Swiss Made T.

This is a screenshot of a Breitling Catalog showing the 815 LP without Top Time on the dial. So it seems the 815 LP was made without Top Time on the dial?

Ah, ok. Now i am confused again. The longplaying is defined then by different mainsprings in 810 vs 815? The sub reg totalisers on both 810 and 815 are 12 h so that is not it, correct? And the 815 is not a Top Time because nowhere on the watch it says Top Time and it was not part of the Top Time range? Is the 815 not very similar to the 810 mk2, disregarding the movement?

I am really sorry but my brain is about to explode, so please help me before i need to go the vintage watch collectors sanatorium. There is this page in another Breitling catalog, Calling the Top Time 810 mk 2 “Long Playing”? So both 810 and 815 are longplaying?
