The question to those of you with more knowledge, which of these two models would you get? and why? The newer B01/43mm or the A23322/42mm? in terms of movement, which one is a better choice?

Good choice, it's an awesome if perhaps somewhat delicate watch. As for movements: The 7750 lineage movements are robust and affordable, so definitely worth considering. But for me, if you go modern Breitling, I'd go the B01 route. Not only is it a beautiful movement, it's also thoroughly Breitling.

I once owned a A23322 (Super Constellation) and remember that I did not have a quick-set function for the date–something that turned out to be very annoying very quickly. You might want to consider the A41322 instead.

I don't have any opinion on the movements BUT I do want to back DEEC on his date quick set complication comment.
It sounds like a trivial feature but it is a must.

You will hate yourself for not having a watch with this feature when you pick up your watch again after 10 days of no use and have to set the correct date again. Now... if you are going to wear the watch daily, then no worries.

Any watch without quick set can have the date changed by winding back and forth between 9pm and 3am - hardly the end of the world.
