So I'm definitely looking to get a Superocean as my next buy. Not the heritage.

I'm torn between the Superocean/II look (A17364 or A17365) and the Steelfish look (A17390).

Again, I don't like the Heritage line. So which model is considered the "classic" or iconic model? (along the lines of the Rolex sub 16610 is the iconic sub)

I understand what you are asking, but the SuperOcean is the "modern" model and the SuperOcean Heritage is the "classic", based on the Reference 1004. You can sort of think of the Heritage as the 116610 to the 1004 as the Submariner 62XX. The "modern" SuperOcean isn’t really in that lineage and I'm not sure there is a "classic" version of it.

BTW, owners of a 1680 Submariner might question the tag of the 16610 as the iconic date Sub. It’s all very dependent on your collecting frame of reference. There are some that think models from the Schneider-era define Breitling, whereas others believe they are, at best, derivative.

The Superocean II with the rubber bezel insert was generally not well received in my opinion. So I think the Steelfish look is probably more what you mean as "classic".

The Historical classic, what arcadelt posted is the historical lineage of that watch. As far as classic, I believe the 80's -90's had a good run at what Breitling was and have, in some models left behind, was a classic era. I have a Steelfish, Colt, Blackbird from that time frame and they have held up style wise well against what is currently on the market. Just my opinion but I would look at this time frame for a Superocean.
